Bronze Post Medal for All Time! 190 Posts Pecan pralines are a delicious southern confection. When I ws a child, growing up outside New Orleans, my dad used to make them as a special treat. I thought it would be fun to have them for our family Christmas get-together.
Total Time: 20 minutes
Yield: 12-15 candies
Ingredients:
- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 1/2 cup light cream (I used whipping cream, as I was unable to find light cream at the store.)
- 2 Tbsp butter
- 1 1/2 cup pecan halves
Steps:
- Combine the brown and granulated sugars and the cream in a heavy saucepan.
- Bring to a boil, over medium heat, stirring constantly.
- If you have a candy thermometer, when the temperature reaches 228 degrees add butter and pecans. Otherwise, boil until mixture becomes a thick syrup (do not overcook).
- Keep mixture at a boil, stirring constantly, until it reaches 236 degrees, or for another 1-2 minutes.
- Remove pan from heat and allow to cook for 5 minutes.
- Beat the mixture with a wooden spoon, if you have one, we used a plastic coated one, until the candy coats the pecans, but does not lose its gloss. (We really like pecans, so we measured our pecans a bit liberally.)
- Using a tablespoon, drop the mixture onto waxed paper, greased foil, or a piece of marble. Leave about two to three inches between the balls for the pralines to spread.
- Allow to cool. Enjoy as is or crumble over ice cream.
Be advised they can be addictive.
