Broccoli Stuffed PotatoesScrub and pierce potatoes. Bake at 400 degrees F for 1 hour or until tender. Cut a thin slice off the top of each potato and discard. Carefully scoop out pulp, leaving the thin shells. In a small skillet, saute' the broccoli and onion in butter for 5 minutes or until tender.

 

Cherry Rhubarb JamIn a large saucepan, combine the rhubarb and sugar; let stand for 1 1/2 hours, stirring occasionally. Bring to a boil; cook, uncovered, for 10 minutes or until rhubarb is tender. Remove from the heat; stir in gelatin until dissolved.

 

Thai Chicken FettuccineFor sauce, in a microwave-safe bowl, combine the first five ingredients. Cover and microwave on high for 1 minute; stir. Set aside. Cook fettuccine according to package directions.

 

Marinated Flank SteakScore surface of the steak, making diamond shapes 1/2 inch deep. In a large resealable plastic bag, combine the remaining ingredients; add the steak. Seal the bag and turn to coat; refrigerate at least 2 hours, turning occasionally.
