GuacamoleMash peeled avocados. Add remaining ingredients except chips; stir to mix well. Serve with chips.

 

Glazed Peach PieCrush enough peaches to make 1 cup, leaving the rest sliced. Combine crushed peaches with water, sugar and cornstarch. Bring to a boil. Cook over low heat until clear, 2-3 minutes, stirring occasionally. Add margarine.

 

Cheese-Stuffed EggplantCut eggplant in half lengthwise. Scoop out pulp to within 1/2 inch of edge. Bring 2 cups water, salt and 2 tablespoons lemon juice to a boil in 3 qt. saucepan. Place eggplant shells in boiling water; cover. Parboil for 5 minutes.

 

Quick Cherry CobblerMelt margarine in 8x12 inch baking dish. Spoon in cherries. Combine remaining ingredients in bowl, stirring until smooth. Pour over cherries. Bake at 350 degrees F for 30-40 minutes. Serve with ice cream.
