Vegetable Bean SaladMix dressing ingredients and set aside. Drain all canned vegetables, mix with fresh vegetables. Put into a large, covered container and pour dressing on top. Refrigerate overnight before serving. Keeps well for 2 weeks.
Three Day Coconut CakeBake the cake according to the directions in two 8 inch or 9 inch pans. Combine the sour cream, coconut, vanilla and sugar together and chill. Reserve 1 cup of the mixture to add to the whipped topping. Spread the coconut mixture between the cake layers. Frost the cake with the coconut and whipped topping mixture.
Tangy Zucchini SauteIn a large skillet, saute zucchini and onion in oil until tender, about 10 minutes. Stir in the garlic, Italian seasoning, salt and pepper; saute 1 minute longer. Add vinegar and saute for 1-2 minutes or until liquid is evaporated and zucchini is evenly coated. Happy tasting.

Swedish Rice PorridgeIn a saucepan, with 1 cup of water, combine the rice, salt and butter together, until boiling. Cover the rice and cook for 10minutes. Stir in the milk and cinnamon stick. Cover and cook, over low heat, for about 45 minutes or until the rice is tender, stirring occasionally.
Diabetic Fruit CakeCombine all fruit, juice,and nuts. Stir well. Mix in remaining ingredients, mix well and pour into a well greased 10 inch Bundt pan. Put into a preheated 350 degree F oven for 40-50 minutes.
Blueberries and Cream PieMix Cool Whip, condensed milk, and lemon juice. Fold in blueberries. Fill each crust and refrigerate.

CD-R Recommendations For Burning Music?I have been using Memorex CDs to make a copy of my music and pictures off of my computer. I have problems with my CD player in my car when I use these CDs that I have made. They skip a lot, and a lot of the times the player is not able to read them at all.
