Green Chili Pot RoastPlace roast in slow cooker, top with green chilies, a can of Mexican-style tomatoes, and stir in garlic powder. Cook on low 10-12 hours. Shred with 2 forks. Meat should be very tender when cooked this long. Salt as desired.

 

Apple Pan Goody Breakfast In a large skillet, saute the apples, cranberries, brown sugar and 3/4 teaspoon cinnamon in butter until apples begin to soften, about 6 minutes. Transfer to a greased 13x9 inch baking dish.

 

Easy Pepperoni DipIn a crockpot or slowcooker add cream cheese and pepperoni. Cook on low heat for about 1-1/2 hours. Stir every 5 minutes to mix ingredients together. serve with your favorite chips. I serve this with tortilla chips.

 

Chocolate Meringue PieBlend sugar, cornstarch, flour and salt. Stir in the milk. Add chocolate which has been melted over hot water. Cook milk, chocolate, and dry ingredients, which have been mixed together over hot water on low heat until thick. Beat egg yolks and pour part of the mixture over them, stirring well.

 

Zucchini "Crab" CakesThese are the vegetarian crab cakes. They taste just like you made them with crab. Absolutely delicious!

 

Tilapia and Veggies With Red Pepper SauceIn a large skillet, bring wine, water, lemon juice, and 1/2 tsp. salt to a boil. Reduce heat and add tilapia. Poach, uncovered, for 5-10 minutes or until fish flakes easily with a fork, turning once. Remove and keep warm.

 

Chinese BeefBrown beef, put in casserole. Chop onion and celery and sprinkle over meat. Add peas. Combine milk and soup and pour over the ingredients in the casserole. Top with buttered crumbs. Bake 35 minutes at 375 degrees F.

 

Salmon BallsMix above ingredients and roll into balls. Put in cake pan. Pour 1 can mushroom soup diluted with 1 can water over the salmon balls. Green peppers may be added, to taste. Cook 30 minutes at 350 degrees F.

 

Reach-For-More RollsStir hot water into mashed potatoes. Add salt, sugar, melted shortening. When cool, add eggs and yeast. Add flour. Make into dough. Knead well. Let rise for 2 hours in a warm place. Knead down.

Humidity Softens My ClothesI'm fortunate to live in a climate that's humid and warm so I usually line dry. On the rare occasion I use the dryer, I'm able to dry my clothes without fabric softener or dryer sheets because of the humidity.

Plastic Lids Work as Small Dry Eraser BoardsMargarine or butter container lids make great dry erase boards. You can use washable markers on them or dry erase markers on them. I cut the rim off of the top of the margarine container lid and make a hole with an icepick.
