Aguas FrescasRefreshing and healthful fresh fruit drinks for summer from Mexico. Combine all ingredients in a blender and whirl 'til smooth. Pour into tall glasses and serve. (If making in advance, skip ice cubes.

 

Hot Fudge ToppingWhisk above together, and put through little sieve if necessary to make sure cocoa powder has no lumps. Add 3-4 tablespoons milk (skim, whole, evaporated, any will do).

Pinto Bean PieYou might not believe this recipe but it is real and it works. It looks and taste a lot like pecan pie. Mash beans until they are completely mashed. Combine sugar, spices, add beans, egg, egg yolks and mix.

 

Barbecued PotatoesPeel potatoes and slice thin. Combine with all ingredients. Place in 2 qt. covered casserole. Microwave on high. Stir every 3 or 4 minutes until potatoes are almost cooked.

 

Cauliflower ScallopA great way to do cauliflower! Combine soup, milk and eggs. Stir in half of the cheese, bread crumbs, parsley, pimento, onion, 1/2 teaspoon salt and a dash of pepper.
