Antipasto SaladIf you're like me you'll want to make up extra because it will keep up to a week in the fridge for more meals. The best part is that it tastes even better after marinating a day or two.

 

Freezing And Using PumpkinPumpkin can be peeled cut in cubes and blanched in water, cooled and packed in ziplock bags to freeze.

 

Cracker Barrel's "Fried" ApplesFor Cracker Barrel restaurant lovers. In a large skillet, melt bacon drippings. Pour apples evenly into the skillet. Sprinkle with lemon juice, brown sugar and salt.

 

Chocolate Brownie CookiesHeat oven to 375 degrees F. Combine shortening, brown sugar, water, and vanilla in bowl. Beat a medium speed. Beat eggs into creamed mixture at low speed.

 

Egg Drop SoupWash and separate spinach leaves. Break into 4 inch sections. Beat eggs. Bring chicken broth to a boil. Add salt and spinach. Add cornstarch paste. Stir a few seconds until stock thickens.

 

Sour Cream Raisin PieGrind raisins and combine with all other ingredients. Turn into pan; top with a layer of pastry. Bake in quick oven 10 minutes.

 

Escalloped TurkeyAnother great way to use leftover turkey. Mix turkey with dressing. Put in 9x13 inch pan. Make gravy. Don't make gravy thick; should be rather thin.
