Microwave Coconut or Banana Cream PiePlace milk in a 4 cup glass measure. Heat in microwave on medium high for 5-6 minutes or until scalded. Mix together sugar, cornstarch, and salt in 2 qt. casserole.

 

Diabetic Blueberry MuffinsLightly coat the blueberries with the 2 tsp. flour. In a large bowl, mix together the 1 3/4 cup flour, baking powder, nutmeg and cinnamon. In a small bowl, beat the eggs or egg substitute lightly.

 

Stuffed Cornish HensJust 2 ingredients, for some easy, quick 'Chicken' and Stuffing'. Mix contents of stuffing box with amount of water given in directions. Stuff both hens, should have some left over, spoon into corner of baking pan or put in separate pan.
