Cranberry Waldorf SaladProcess cranberries in food processor until finely chopped. Combine with marshmallows and sugar in bowl; mix well. Chill overnight. Add grapes, apples and walnuts to cranberry mixture; mix well.

 

Rice PuddingIn top of double boiler, cook raw rice in water until soft. Add to the soft rice, evaporated milk, regular milk and sugar. Cook mixture so it boils for 5 minutes. Top with fruit and serve.

 

Whole Wheat Pancake Mix in a JarMy husband works, and although I am retired, my schedule is hectic. I like to make sure he has a good breakfast before heading out as he is a diabetic. He loves pancakes, and although I know they tend to raise the blood sugar of some diabetics, these do not raise his.

 

Buffalo Chicken WingsCut off and discard small tip of each wing. Cut apart main wing bone and second wing bone at joint. Sprinkle wings with salt. If desired, add pepper, to taste.

 

Grilled Meat LoafCombine ground beef, egg, onion, 1/4 cup ketchup, 2 tablespoons brown sugar, cracker crumbs, and mustard in large bowl; mix well. Shape into loaf; place in lightly greased 10 inch baking pan.
