Weirdly, The Brown Palace can be really fun, even for a not girly girl. Just have them explore the Brown Palace on their own for 30 minutes or so and see what the want to see in the place.
My birthday is in winter. I would recommend maybe skating, smores, volleyball, arts and crafts, scavenger hunt at the end should be like a big basket of candy per person.
