You will have to have it after Easter. You will have very few people coming Holy Week. After Easter you can have all the chocolate and candy you want. Many people give those things up for Lent.
I'd announce it now and see how many people can actually make it given the date, then plan from there. You could have a crafting party that is Easter based.
It'd be fun to do an Easter Hunt! But did you want to do Easter related activities? Or a pool party? Movie party? Slumber party? Bowling!
