I had a recipe for peanut butter cookies, that only used 3 things to make them. I have misplaced it and was wondering if anyone would happen to know what it is. I believe it used 1 cup sugar, 1 cup peanut butter, but I can not remember what the third thing was. Also, my husband is diabetic, could I replace the sugar with Splenda? Thank you in advance.

Those cookies are delicious. They take 1 cup sugar, 1 cup peanut butter and 1 egg. Bake for 10-13 minutes at 350 degrees F.

Don't use regular Splenda for this recipe, use Splenda for baking. I baked these using regular Splenda. I had to throw them away because they were terrible. I called the company and was told to use the Splenda for baking when baking cookies. I never did try the Splenda for baking because of the expense. I used regular sugar and they were great. The recipe I have says to add 1 tsp. vanilla also. Emeril makes them with chocolate chips. I have made them with regular splenda. They weren't as good as with sugar but were edible. (10/28/2009)
