Why not plan an entire day for just the two of you (unless you have sibs who want to join)? Planning is half the fun, so why not you and he talk about all the options? Could be you making breakfast, could be a short (or long) road trip to someplace he's always wanted to go or go back to, could be lunch at a favourite place, could be a new adventure, could be a day at a theme park, could be a class of some kind where the two of you can learn something new together (particularly if he's looking for a new hobby), could be getting together with a few friends for (potluck) dinner ...?
