Ingredients:
- 1 box box of Prince ready cook Lasagna noodles
- 1 32 oz. container Ricotta, part skim
- 2 jumbo eggs, beaten
- 1/2 cup grated Parmesan/Romano cheese
- 1 16 oz. bag shredded mozzarella cheese (part skim)
- 1 8 oz. bag fresh shredded parmesan cheese
- 16 fl oz heavy cream
- 1 /2 cup (1 stick) fresh butter non- salted (opt)
- 2 10 10 oz. packages frozen chopped spinach, thawed, and squeezed the water out.
- Seasonings
- black pepper
- basil
- parsley
- 2 garlic, minced
Steps:
- Start by mixing up the Ricotta mix. Using a large mixing bowl, add the ricotta, add beaten eggs, grated cheese, 1/4 tsp. of black pepper, 1/2 tsp. basil, 1/2 tsp. parsley, and minced garlic, Mix very well, Add drained spinach and mix thoroughly. Set aside.
- Start making your Alfredo sauce. Using a saucepan, heat and melt butter, add fresh parmesan cheese, stirring very fast, whisking in heavy cream, whisking until thickening. Remove from heat. It will thicken more.
- Pour enough sauce on the bottom of a 9x13 baking pan, then layer three lasagna noodles. Next layer is ricotta layer spread thick topping it with a handful of mozzarella cheese. Layer three noodles, pour Alfredo sauce with a handful of mozzarella cheese, then a layer of noodles, then again Ricotta mixture with mozzarella cheese and a handful of mozzarella cheese. Top with a layer of noodles, last, top with remaining Alfredo noodles, top with mozzarella.
- Bake at 350 degrees F for 45 minutes or until bubbling and turning golden brown. Let this set for a half hour or more before cutting.
