Gold Post Medal for All Time! 677 Posts This is a healthy snack or breakfast item. I substituted flaxseed meal for the wheat germ and used Truvia for the brown sugar. I also used craisins for a bit of color this holiday season. Due to allergies in the family I left out the nuts. This freezes well.

Total Time: 1 hour 10 minutes
Yield: 12 slices
Ingredients:
- 1 cup unsweetened applesauce
- 1/2 cup melted butter or oil
- 1/2 cup honey or brown sugar
- 2 eggs
- 1 tsp vanilla (optional)
- 1 1/2 cup whole wheat flour
- 1/2 cup wheat germ
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 to 1 tsp cinnamon
- 1/4 to 1/2 tsp nutmeg
- 1/2 to 1 cup raisins
- 1/2 cup sunflower seeds or nuts
Steps:
- Preheat oven to 350 degrees F.
- Mix together the butter or oil and sweetener.
- Add eggs, one at a time, mixing well.
- Add vanilla, if using. Add the applesauce.
- In another bowl, combine all the dry ingredients. Add the raisins and nuts.
- Add the dry ingredients to the wet ingredients. Mix until moistened.
- Put prepared mixture in a greased loaf pan.
- Bake for 55-60 minutes. Allow to cool in the pan 30 to 45 minutes.
- Remove from the pan. Wrap and store overnight before slicing.
