I am looking to start a topic for those of us that get food each month from the Angel Food Ministries. I would
like to know what you have made from your Angel Food groceries.
Example, I used some of my boneless chicken breast and the frozen peas and carrots to make a yummy homemade
Chicken Pot pie. I cooked the breaded beef fritters and field peas another night and fried potatoes with them as
well.
If someone has an idea as to how they will use this months food as well, I would like to know!

We get a lot of chicken and one way I use chicken thighs is to make a marinade of one small bottle of French
dressing, one cup of whole berry cranberry sauce, and two tbls of dry onion flakes or dry onion soup mix. Combine
all three and pour over chicken and refrigerate 3-4 hours or longer. Bake covered at 350 degrees for one hour. I use
my slow cooker until the chicken is tender. I also remove the skin from the chicken before it is marinated.

Saturday night I made two of the breaded chicken breasts in the toaster oven. I deep fried the shoestring fries. I
served the chicken with sides of hot wing sauce and ranch for dipping. Tonight I made philly cheesesteaks. I
toasted hamburger buns. I sliced some mozzarella cheese and sauteed onions in butter with salt and pepper. I
cooked the steaks and piled the meat on the buns, topped with the cheese and onions. Good football watching food.
I have to go through my recipes when I have some free time (ha), but here's a couple ideas to start.
Greek chicken leg quarters with couscous: Rub chicken legs with olive oil, sprinkle with Greek seasoning (or
mix of rosemary, oregano, salt, pepper) and chopped garlic. Bake or saute until cooked through. Serve with
couscous prepared with chicken broth.
Easy Beef Stroganoff: Brown 1/4 to 1/2 lb ground beef with onion flakes and Spike (a vegetable based
seasoning). Mix in one can cream of mushroom soup and 1/4 cup water. Add 1/2 packet brown gravy mix and 1/3 cup
sour cream. Serve over cooked noodles or rice.
I'm going to make cheesy pigs in a blanket with the hot dogs.
Cream of broccoli soup: Mix one can chicken broth, one can cream of mushroom soup, one block of cream cheese
and the bag of frozen broccoli. Heat and season to taste. You could also use cheese, celery or broccoli soup.

Hello everyone, just wanted to say this is awesome. My fiance and I are the host site directors for AFM in
Lake Milton, Ohio, our first month with AFM was April of 2005. About 2 or 3 months after that we saw there were a
couple items on the next menu and some of us were just at a loss how to cook them. So some of us ladies got
together and now we offer recipes on distribution day, printed out each month for certain items on the menu. So
imagine my surprise when I received this link in my email.
Well after having said all that I really should include a recipe, lol.
Ingredients:
Directions:
Empty corn muffin mix into a medium mixing bowl. Save about 1 T of shredded cheese and bacon for topping; stir
remaining cheese and bacon into muffin mix. Mix in egg and milk, following label directions. Pour batter into a
greased and floured 8-inch square baking dish. Bake at 400 for 15 minutes; sprinkle reserved cheese and bacon over
top and bake 10 minutes longer, or until cornbread browned and firm.

On April's menu we will be getting meatballs. I like to fix meatball subs with them. I use 1 package of meatballs,
1 can of pasta sauce (I prefer Hunts meat sauce). Pour sauce over meatballs and heat. I buy the hogie buns and
sliced cheese. They are really good! About 4 meatballs will fit on 1 hogie, to give you an idea of how many it

Here is a great recipe for the pork roast.
Pork Roast
Mix the salt, pepper, sage, and thyme together and rub over the surface of the pork roast. Let it sit overnight
or a minimum of 2 hours in the refrigerator. Heat the vegetable oil in a skillet and brown the roast on all sides.
Remove the roast to a baking dish. Saute the onions and garlic in the oil until the onions are limp. Add the apple
juice and bring to a boil. Pour over the pork roast and cover the baking dish. Bake at 325 degrees F for 2 hours.
When done, remove the roast and let it "rest" covered with foil for 10 minutes before slicing. Pour the drippings
from pan into a blender or food processor and blend until smooth. Reheat and pour over the sliced pork.

Boneless Skinless Chicken Breast
Take them and either put them in a crock pot and pour cream of chicken soup over them and a can of chicken
broth and let cook, it tastes great over mashed potatoes or noodles.
Or you can cook them in the oven also, the same way. We love them. (12/08/2006)

I take the popcorn chicken cook them till done, either deep fry or oven. Then I spread them on a foil lined baking
pan, pour a cup of Asian season sauce or barbecue sauce to coat over all. Put in 450 degree oven for 15 - 20 min.
It's not hot wings, but very good and simple. Kids loved it with salad and ranch dressing. (05/18/2007)

I've made several different things.
I use the kraftfoods.com recipes to find different meal ideas, as well as some other online recipe groups. Here
are a few I have tried recently and liked.
Combine all ingredients except rice in large skillet; cover. Cook on medium heat 10 min., stirring
occasionally. Increase heat to medium-high; uncover. Cook 8 to 10 min., or until sauce is thickened and meatballs
are heated through, stirring occasionally.
Serve over the hot cooked rice.
And for the popcorn chicken, I made sweet and sour chicken with fried rice
In a large skillet or wok, heat oil. Stir-fry pepper and onion for 3-4 minutes or until crisp-tender.
Drain pineapple, reserving juice in a 2-cup measuring cup; set pineapple aside. Add enough water to the juice to
make 1 1/3 cups. Stir in the vinegar, soy sauce and ketchup.
In a bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture and mix until smooth. Gradually add
to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add pineapple. Reduce heat and
simmer, uncovered, for 4-5 minutes or until heated through.
Meanwhile, microwave chicken according to package instructions (I fried the chicken according to the package
directions). Stir into pineapple mixture. Serve immediately.
*I use the frozen pepper stir fry mix to substitute for the pepper and onion, and do so for most recipes that
call for peppers.
This week I plan to try the Crockpot Honey Chicken and Dried Fruit from the link left by Janna Kelley on 6/8.

Creamy Chicken Pasta Toss
Prep Time: 10 min
Total Time: 35 min
Makes: 4 servings, 2 cups each
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 minutes or until evenly browned,
stirring occasionally.
Add milk and cream cheese spread; mix well. Bring to boil. Stir in pasta; cover. Reduce heat to medium-low.
Cook 10 min. or until pasta is tender and chicken is cooked through. Add vegetables; cook 5 minutes or until
heated through. Sprinkle with the cheese.

I am not a big 'bean' eater, and have been trying to find a way to
use the pinto beans we so frequently get in our food order. So the
other night I made them in the crockpot with the St. Louis
Ribs. Yummy!
Here is the recipe:
Sort beans, rinse and drain. Combine all ingredients in 3-4 qt
crockpot. Cover crockpot and cook on low for 8-9hrs or until beans
are tender. 6-8 servings.
In addition, I seasoned the ribs with salt, pepper and BBQ seasoning
and threw them in too. Next time I will wait about 2hrs because they
were so tender they fell of the bones.
I served them up with extra BBQ sauce and cornbread. It was very good!

Swedish Meatballs
I used this recipe for the meatballs we received last month, I think.
Mix flour and broth, bring to a boil. Add thawed meatballs, reduce heat to low; cover and simmer until heated
through and sauce is thickened. Stir in sour cream and nutmeg. Serve over hot cooked rice.
I served along side some green beans, too.
An easier/similar version would be to use cream of mushroom soup.

The fajita chicken from July's Angel Food was useful for many dishes. I cooked it in a large frying pan in olive
oil and some sliced up onions. When it was almost done I threw in sliced mushrooms. This combo was the basis for a
few different meals. The first night we threw it in flour tortillas with some Mexican cheese mix and some Spanish
rice. I also used it in a wrap with romaine lettuce, mozzarella cheese, and Caesar dressing. It is also good with
pasta and sauce of your choice. (08/28/2007)

Easy Sweet N Sour Chicken using Angel Food Ministries Chicken Fritters
Bake chicken fritters in oven according to directions. Mix brown sugar and cornstarch in non-stick pan. Stir in
pineapple with juice, vinegar, and soy sauce. Heat to boiling, stirring constantly. Reduce heat, simmer stirring
occasionally for about five minutes. Stir in peppers and tomatoes. Just before serving stir in the chicken and
coat all. Serve over brown or white rice or ramen noodles.
Note: this dish is pretty as a picture, and delicious enough for company. Enjoy! (09/07/2007)

This month we received pork loin chops and I found a recipe for chops topped with a can of mandarin oranges,
cloves, and pepper. You cook your chops in a skillet with oil until they're brown and then add a can of mandarin
oranges, a half teaspoon of cloves and some pepper and let them simmer for about 20-25 minutes until all the juice
runs clear. My kids love mandarin oranges and they are inexpensive and a staple in our house. (09/19/2007)

I am new to AFM and must say jaltman on 6/23 I tried your recipe and it was delicious. I also added in some of the
carrots that I received in my September box.
Today I am making the pork chops and didn't see a recipe here so I invented one with my AFM food. Please note I am
just cooking for two now and I don't measure ingredients, but this is basically what I did.

I use the chicken quarters and the rice to make a yummy herbed chicken and rice. First I cook the rice and then
put it in a casserole dish. I add a tablespoon of oil and add lots of French herb seasoning rub blend (add the
amount you prefer). I then rub the thawed chicken quarters with the same seasoning and put them on top of the
rice. Then I add a few pats of margarine to the dish and cover. I bake it on 400 for 45 minutes and it makes a
delicious meal. Then I add a veggie or a salad. (10/14/2007)

The January 2009 box included manicotti and ground turkey. I sauteed the ground turkey with onions and bell
peppers, salt and pepper. I then added a jar of pasta sauce. I spread some of the sauce in a casserole dish,
added the manicotti on top, and then another layer of sauce on top. I baked it until the manicotti was heated
through. It was delicious and really stretched the manicotti! (01/26/2009)

Several months ago they had coated chicken pieces. I used about 1/2 of the bag in a chicken soup recipe and it
turned out great! The coating was just enough to thicken the broth. The soup disappeared very quickly. My grand

For the country fried steaks, what I did is I heated them up in a skillet with just a little oil then I made a
brown onion gravy with some dehydrated onions and a brown gravy mix, poured it over the top once the steaks were
done and had a quick and easy Salisbury steak type of thing with a side of mashed taters. Then the next day I
heated up what I hadn't used in my toaster oven and turned them into sandwiches (without gravy).

I use it in my spaghetti sauce instead of hamburger. I also like to add it to my scrambled eggs, or quiche, or
even as a pizza topping for a homemade pizza.
