Silver Post Medal for All Time! 355 Posts A recipe from Jackie's Kitchen :)
Ingredients:
- 1-1/2 cup butter
- 1 cup white sugar
- 3 eggs (I use jumbo eggs)
- 1/2 cup milk
- 2 tsp vanilla
- 2 cups all purpose flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1-3/4 tsp baking powder
- 2 tsp cinnamon
- 1 cup light brown sugar
- 2 Tbsp butter
- 2 tsp cinnamon
- 4 large MacIntosh Apples, peeled, sliced, and chopped
Steps:
- Preheat oven to 350 degrees F. Grease (I use spray oil) and flour a large loaf pan or I use a Tube Pan (Angel Food Cake Pan). I really like the new spray oil with flour in it. It's amazing!
- Melt 1 1/2 cups butter in a mixing bowl, add 1 cup white sugar, using an electric mixer until smooth. Beat in the eggs, 1 at a time. Add milk and vanilla. Set aside.
- In another bowl, combine flour, salt, baking soda, baking powder, and 2 tsp. cinnamon. Stir into the creamy mixture, stirring well until very creamy.
- Using a small bowl, combine brown sugar, 2 tbsp. butter, and 2 tsp. cinnamon, mixing until crumbs are evenly combined. Set aside.
- Take your creamy batter and pour 1/2 batter into the Tube Pan, followed by 1/2 the chopped apples, then 1/2 the brown sugar mix, and repeat this, batter, apples and brown sugar. Give this a press down gently.
- Put it in the oven for 45-50 minutes using a tooth pick for doneness.
- When done, let sit for a 15 minutes, turn over on a dinner plate and flip over again, onto another dish, so the crumb side is on top. Completely cool.
- I usually wrap tight with plastic wrap, refrigerate and cut it the next day.
