Diamond Post Medal for All Time! 1,246 Posts I call this my "Adult Poke Cake." I made this cake for a good friend who adores cognac and it went over really well. Yes, you can really taste the cognac here, especially because it's topped with a cognac brown butter. The juices from the apples keep it nice and moist, while the cooked down nuts have a fantastic texture. Happy baking!

Cook Time: 55 minutes
Total Time: 1 hour 15 minutes
Yield: 16 servings
Ingredients:
- 2 1/2 cup all-purpose flour
- 1 cup sugar
- 1 cup packed brown sugar
- 1 1/2 tsp baking soda
- 1 tsp salt
- 3 tsp cinnamon
- 1/2 cup melted butter
- 1/3 cup oil
- 1/3 cup cognac
- 2 tsp vanilla
- 3 eggs
- 1 cup walnuts
- 4 small apples, peeled and thickly sliced
- 1/4 cup butter
- 1 cup powdered sugar
- 4 Tbsp cognac
Steps:
- Heat oven to 350 F. Grease and line a 10 inch pan with parchment paper. I used an 7 inch and a mini pan so I could have two cakes.
- In large bowl, combine flour, sugar, brown sugar, baking soda, salt and cinnamon. Mix well.
- In another bowl, whisk together oil, butter, cognac, vanilla and eggs.
- Pour wet mixture into dry mixture. Blend well.
- Give the walnuts a good chopping.
- Fold nuts into cake batter.
- Pour batter into pan(s). Lay the apples around the perimeter, leaving the middle of the cake exposed.
- Bake at 350 F for 50 to 60 minutes, until toothpick inserted in center comes out clean. Allow cake to cool 15 minutes before removing from pan(s).
- In small saucepan over medium heat, cook butter until light golden brown.
- Remove from heat. Whisk in powdered sugar.
- Whisk in cognac.
- Poke the top of the cake several times with a skewer or toothpick.
- Spoon the brown butter on top.

Thanks Michelle! I recently took one to a party and this one guest kept cutting at it and cutting at it until it was a thin slice with crumbs around it. Risky of him, but flattering for me :D
