Applesauce Cake

Ingredients:

• 2 cup brown sugar
• 1/2 cup shortening
• 2 cup hot applesauce
• 2 1/2 cup flour
• 1 cup raisins
• 1 cup chopped nuts
• 1 tsp. cinnamon
• 1/2 tsp. cloves
• 1/2 tsp. nutmeg
• 2 tsp. baking soda

Directions:

Heat oven to 350 degrees F. Grease 9x13 pan. I heat the applesauce in a saucepan, melt the shortening in hot applesauce. Add sugar, raisins, nuts, and dry ingredients. Mix well. Bake 45-50 minutes. No eggs needed.

Applesauce Cake

It was a very simple and easy recipe. Even though I didn't add the raisins and nuts it was still quite tasty. I don't think it's the kind of cake that would require frosting, but only a light dusting of powdered sugar. It would be great as a bundt cake. (10/03/2010)
