Diamond Post Medal for All Time! 1,246 Posts This is a nice sweet and savoury twist on a typical meat marinade. It uses apricot preserves in lieu of sugars. The pureed onion and cider vinegar really help tenderized the meat nicely. This marinade works great with most meats. This would be fantastic cooked out on the grill for your barbecues.
Ingredients:
- 2 lb skirt steak (divided if cooking in pan)
- 1/4 medium onion, sliced
- 3 cloves garlic
- 3 Tbsp apricot preserves
- 1/3 cup soy sauce
- 3 Tbsp cider vinegar
- 3 Tbsp oil
- 1 tsp salt
Steps:
- To make the marinade, place all ingredients (except steak) into a food processor or blender.
- Puree until very smooth.
- Place steak in marinade, cover, and refrigerate at least 1 hour.
- Bring marinated meat out from fridge and place on counter at least 20 minutes to bring closer to room temperature so it cooks evenly. Grease a pan (or a grill) and cook both sides until you reach desired doneness.
