Ingredients
- 1 qt. boiled potatoes, cooked in jackets.
- 3 Tbsp. butter
- 1/2 onion
- 1/2 green pepper
- 3 Tbsp. flour
- 1 pint milk
- 1/2 tsp. salt
- dash pepper
- 1/8 lb. Velveeta cheese
- 1 slice Cheddar cheese
- 1 Tbsp. canned pimento
- 2 Tbsp. chopped parsley
Directions
Slice or dice potatoes. Saute onions and pepper in butter, add flour and milk. Cook until thick. Add remaining ingredients. Butter casserole dish and alternate sauce and potatoes until full. Or just mix the potatoes and sauce together and pour into casserole. Bake in moderate oven until heated through, 30 minutes at 350 degrees F.
