There are different kinds of salsas restaurants serve (salsa cruda, salsa fresca, pico de gallo, salsa verde). Can you be more specific of what you're looking for?
The salsa I've always had at Mexican restaurants is a very fresh pico de gallo, which is extremely simple to make. Fresh tomatoes, a little chopped onion (I like to use sweet onion), a little or a lot of fresh cilantro, and freshly squeezed lime juice.
My home health aide is from Mexico & they cook salsa in Mexico. Tomatoes, onions, jalepanoes, cilantro (not cooked). I'll have to get her recipe & post later. Their salsa is nothing like American salsa.
