I have a new Maytag gas dryer, but it is deeper than my previous dryer. I have removed the back panel to allow extra space for the vent pipe, and so I can close an adjoining door. Is it safe to leave this back panel off? It is not structural.

I do not believe you should leave this panel off due to accumulation of dust that is around any dryer.
But; that said; you should contact the store where purchased and ask them your question as otherwise you may be violating your warranty and that would not be good.
If you do not wish to go this route then you need to contact someone who knows if this is safe or what else can you do.

I would definitely contact Maytag to see if it is OK to leave the back panel off the dryer. (This doesn't sound safe IMHO.) Here's the manual for a Maytag gas dryer.

No. That back panel acts as a fire wall. It needs to stay on.
You should know that dryer installation must be performed by a qualified installer. And everything related to gas requires strict compliance with the requirements.
