Silver Post Medal for All Time! 355 Posts These crunchy baked potatoes are more like French fries when completed. They are perfect as a dinner side or a snack.
Total Time: Prep Time; 15 minutes, Cooking time 1 hour
Yield: As many as you are feeding, 1 potato per person

Ingredients:
- 2-4 large white potatoes
- olive oil
- *seasonings to taste
*I would say a 1/8 of a tsp. of everything then you adjust to your taste and amount. Light on the season salt. I use Old Bay seasoned Paprika, black pepper, basil, garlic dried minced, minced onion, topping them off with a sprinkle of imitation bacon bits
Steps:
- Wash and scrub your potatoes. On a cutting board, place the potato lengthwise. Using a sharp knife, cut through the potato only to 1/8th from the bottom. Continue cutting the potato, 1/8 inches apart, until you are done. It will look like a fanned potato.
- Place your potato on a small baking dish, I used a glass pie dish. Drizzle with oilve oil. then sprinkle your seasonings finishing by topping it with bacon bits.
- It goes into a preheated oven at 450 degrees for 45 minutes to 1 hour. I would pull them out half way through and tip the dish and pour the hot olive oil over them, then back in the oven.
- When these are done, they are ready to eat. Topping could be: sour cream, bacon bits, chives, scallions, anything your imagination can do. Enjoy!
