Bronze Post Medal for All Time! 105 Posts I have an organic garden where we grow a lot of fruit and vegetables. We have a lot of banana trees that produce year-round. At times we have so much that we end up selling them to the local markets or giving them away to our family. Other times I just keep them to make banana cakes, cookies, and bread. Here is an excellent recipe I use to make banana cookies.
Prep Time: 10 Minutes
Cook Time: 8 to 10 Minutes
Total Time: 1 Hour
Yield: 3 to 4 Dozen
Ingredients:
- 2 1/2 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup white or brown sugar
- 2/3 cup butter
- 2 Eggs
- 1 cup mashed bananas
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
Steps:
- Peel and mash the bananas until you have 1 cup.
- In a large mixing bowl, cream the eggs, butter, and sugar together.
- Add your bananas and mix well.
- Add the dry ingredients.
- Preheat the oven to 350 degrees F.
- On ungreased cookie sheets, drop spoonfuls of the batter. You will need to spread this out just a bit. Bake in the oven for 8 to 10 minutes until they are golden brown.
- Remove from the oven and cool on a rack. These are a soft cookie and are great with coffee, tea, or even milk. The cookies can last for 3 to 4 days as long as they are in a sealed container. If you live in a warm climate it is best to refrigerate the cookies.
