It is much faster to cook these yellow eye heirloom beans in an Instant Pot because it is much quicker versus the stove but you can still use the stove to achieve this dish.
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes + natural release
Yield: Varies depending if this will be eaten as a side dish or mixed into quinoa.
Ingredients:
- 8 oz Yellow Eye Heirloom beans
- 4 cups water
- 1 tsp salt
- 1 onion
- 2 bay leaves
- 1 garlic clove
- 25 oz enoki mushrooms
- Bunch kale stems
- quinoa
- 1 Tbsp olive oil
Steps:
- Prep ingredients - chop onions, garlic, enoki mushroom and kale stems.
- In your instant pot - add beans, salt, water, onions, bay leaves and garlic. Set instant pot on high pressure for 28 minutes with natural release.
- In the mean time, on medium high heat, add olive oil and sauté kale, enoki mushrooms then set aside to combine with beans later.
- Once beans is done cooking, combine with sautéed vegetables to create your side vegetable dish.
- Or, you could mix your sautéed vegetables and beans with quinoa if you want.
