Place oranges in hot water for about 45 minutes - 1 hour; remove from water and let cool until you are comfortable handling them by hand. Take a tablespoon (or teaspoon) and begin peeling the orange from the navel, the skin should peel leaving all the white on the peal and virtually none on the orange. This is an old restaurant trick I learned long ago.

How do you keep the water hot for an hour without cooking the oranges? (03/06/2008)
I just bring the water to an almost-boiling point, place oranges in, then place cover on the pot and turn the burner to 'OFF'. Time will vary depending on size and quantity of oranges. The peeled oranges will be warm; place in refrigerator to cool. (03/08/2008)
