Ingredients:
- 8 oz rice stick noodles
- 1 bunch scallions
- 4 eggs
- 1/2 cup lime juice
- 1 package firm tofu
- 1 lb shaved beef steak
- 1/2 cup snow peas
- 1/2 cup brown sugar
- 3 Tbsp vegetable oil
- 2 Tbsp fish sauce
Steps:
- Prep your ingredients. Cut the scallions separate white/greens and cube tofu. Prepare your rice noodles and follow the directions per packaging on how to cook as each brand varies.
- On medium high heat, add vegetable oil. Beat eggs and stir to cook.
- Add scallion whites, snow peas and tofu. Cook for a few minutes until combined. Remove the vegetables and tofu from heat into a bowl.
- In the same pan, cook your shaved beef steak.
- Make sauce of lime juice, brown sugar and fish sauce.
- Toss back your vegetables and tofu. Incorporate noodles. Add your sauce blend of lime juice, brown sugar and fish sauce.
- Top off with remaining scallion greens. Cook until sauce is evenly coated.
