This is one of my recipe creations. Hope you like these as much as my family does.
Total Time: 35-45 min
Yield: Approx 24 cookies
Ingredients:
- 1 cup sugar
- 1 cup creamy peanut butter
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour, approx.
- semi-sweet chocolate chips, to taste
Note: You can also add nuts of your choice, raisins or coconut. Don't be afraid to experiment.
Steps:
- Turn oven on at 350 degrees F.
- In large bowl, mix first 3 ingredients together well. Mix in the vanilla extract then stir in the flour.
- Scrape sides of bowl well as you mix. Mixture will be very thick. Don't worry about this because cookie dough needs to be thick to not spread out a lot during baking.
- Spoon out cookie dough with teaspoon and roll with hands until nice and round. Place each roll on ungreased baking sheet about 2 apart.
- When baking sheet is full of cookies, take fork, press down gently and make criss-crosses on each cookie.
- Now press 2 or 3 chocolate chips into top of each cookie.
- Bake in preheated oven for about 10-12 minutes.
- Remove from oven, cool, and enjoy.
