Biscuits

Biscuits in basketDue to the Coronavirus and having to stay at home, we are making less trips to the grocery store, therefore, I'm not buying as much sliced bread as I have in the past.

I pulled out an old recipe for biscuits and made a big batch and froze all but what we needed for a few days. I think this is going to be cheaper than buying sliced bread. They are great for anytime you want biscuits or for making toast for breakfast. Just cut in half and put butter on them and toast in toaster oven. If you don't need to make this many biscuits, the recipe can easily be cut in half.

Anyone want a sausage and egg biscuit for breakfast?

Yield: 70 biscuits

Ingredients:

Steps:

  1. In a large mixing bowl, mix flour, baking powder and sugar together.
  2. Add Crisco shortening and mix together with your hands until well blended.
  3. Add buttermilk and stir together until mixed well. The dough will be sticky.
  4. Add a little flour at the time until you can handle it.
  5. Spoon drop them on ungreased baking sheet or roll them out and cut with a biscuit cutter (you will need to add a little flour to the dough mat for rolling)

  7. Place on ungreased baking sheets.
  8. Bake at 450 F until browned, approximately 10-13 minutes.
  9. Biscuits on bking sheets

  10. Freeze left over biscuits.
  11. Biscuits in bags to freeze

  12. To reheat, place frozen biscuits on a baking sheet. Start in a cold oven and set temperature at 450 F. Bake for approximately 10 minutes or less until hot all the way through. They will taste like freshly baked biscuits.

I remember my Mother making biscuits - everyday and sometimes 2 or 3 times a day. This looks almost like her recipe (although of course she never measured). Buttermilk and a little sugar were always used.

Maybe some of the 'skeptics' will try your recipe and learn something new to carry over past this period of 'confinement'.
I like that you can make too many and freeze them for a later day.

My husband and daughter have really enjoyed them. I wish I could eat them but I have to have gluten free.

Oh, I wish you could, too. I never knew anyone other than my family to toast biscuits. First, we split them in half. Takes me back 70 years.

Sometimes we added a pat of butter before toasting and after toasting we topped them with homemade jellies, jams and preserves.
