I have been eating more beans to save money and eat healthier. I cook dried beans and freeze in 1-can portions (1 3/4 cup.). I thaw in the refrigerator the night before I use them and it is as convenient as using the canned, at a fraction of the cost.
This is delicious and tastes much better than it looks! You can serve as a sandwich filling, as a salad, or warmed over rice. I am writing the recipe as written. I used light mayonnaise, and much less than half a cup.
