Cook Time: 1 hour, 10 minutes
Total Time: 1 hour 20 minutes
Yield: 8 or more (depending how large of a piece you cut)
Ingredients:
- 1 1/2 refrigerated pie crust
- 12 oz frozen blackberries
- 12 oz frozen blueberries
- 1 lemon
- 5 sugar
- 2 oz cornstarch
Steps:
- Add pie crust in pie pan with parchment paper and ramekins. Bake pie crust at 350F for 20-25 minutes or until brown.
- Add all ingredients into a bowl - sugar, cornstarch, frozen blackberries/blueberries. Then, zest one lemon into bowl. Cut lemon in half and squeeze in lemon juice.
- Toss/mix ingredients evenly.
- Pour berry mixture into pie crust. Cut strips of pie crust and place over. Bake pie until bubbly at 350F for about 50 minutes or when ready.
