Diamond Post Medal for All Time! 1,298 Posts I have made this braised short ribs a couple times now, it is always a hit in our house. However, it is a time consuming but definitely delicious and the meat is so tender! Pairs great with french bread, mashed potatoes, rice/quinoa, or roasted vegetables, etc.
Prep Time: 10 minutes
Cook Time: 3 to 3 1/2 hours
Total Time: 3 to 3 1/2 hours
Yield: 4-5 people
Ingredients:
- 3.5 lb boneless short ribs
- 3 medium onions, separated into rings
- 3 stalks celery
- 5-6 medium rainbow carrots
- 1.5 bulb garlic
- 1 750 ml dry red wine
- 4 cups beef stock
- 1 Tbsp tomato paste
- dash salt and pepper
- 3 Tbsp vegetable oil
- 3 Tbsp all purpose flour
- rosemary
- thyme
- oregano
Steps:
- Chop onions, celery and carrots.
- Season short ribs with dash of salt and pepper.
- Over medium high heat in a large dutch oven, add oil and brown short ribs. Then set meat aside.
- In the same pot over medium high, sauté chopped vegetables.
- Add tomato paste and flour. Stir until evenly combined.
- Pour in your choice of red wine. Bring mixture to a boil then lower heat and simmer allowing wine to reduce by half for about 20-25 minutes.
- Add beef stock and herbs, and garlic bulbs. Bring to a boil, turn off and prep to put in the oven.
- Pre-heat oven to 350 F. Cover and cook for about 2 - 2 1/2 hours depending on your oven to when the meat is tender.
