These oatmeal raisin cookies are wonderful for a breakfast on the go. Children will like them.
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Yield: 16 large cookies
Ingredients:
- 1 1/2 cup whole wheat flour
- 1 cup regular rolled oats
- 1/2 cup raisins
- 1/2 cup oil
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1/4 cup ground flaxseed
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 tsp baking soda

Steps:
- Preheat oven to 350 F and line a cookie sheet with parchment paper.

- Mix together oil, eggs, vanilla, applesauce and honey until well combined.

- In another bowl mix together the flour, oats, flaxseed, baking soda, cinnamon and raisins.

- Add the wet ingredients to the dry ingredients. Mix until combined.

- Using a spoon, drop the cookies 2 inches apart.

- Bake for 12 to 15 minutes, or until golden brown.

- Let cool for 5 minutes on the sheet before cooling completely on a rack.
