We recently attending our Mother's Day church cookout, where the men of the church put together a meal for the women. They cooked catfish, hamburgers, hot dogs, tons of cakes and confections.

I always bring fruit.
Fruit is an expensive gift to bring. Cakes and cookies are cheaper. However, fruit is healthy, and if you eat a healthy diet, it is cheaper in the long run.
I absolutely agree! It is my new of like 'pay now or pay later' since eating healthy foods is one way to save on health costs in the future ;)

Sometimes this can be a problem at smaller gatherings because usually everyone has a "planned" item to bring but it sure sounds like a good idea when going to larger potluck dinners.

Most of the dinners I attend have an amazingly large number of cakes and other confections. I would rather see healthy food than all that sugar on the table. They are good though. Just not good for my health ;)
My rule of thumb is to make something that I will not be unhappy if I wind up eating it. Fruit and veggies fit that bill nicely.
I do too, I bring things that will not have a negative impact on my health if I end up consuming the whole package ;)
Thrifty options can include frozen / thawed fruit, particularly in winter months when options for fresh are sometimes limited. Fruit salads using chopped apples, sliced oranges and perhaps even fruit canned in water (such as pears) or pineapple (typically preserved in its own juice) are another healthy and potentially inexpensive option.
