Diamond Post Medal for All Time! 1,246 Posts This soup is perfect for transitioning from the hot months to the cold months. Using the stalks of the broccoli make for a great creamy base for this soup. There is no need for flour or other thickening agents. This soup is super easy to make and looks (and tastes) so elegant!
Total Time: 30 minutes
Yield: 4 servings
Ingredients:
- 2 Tbsp cooking oil
- 1 medium onion, roughly chopped
- 1 celery stalk, chopped
- 1 bunch broccoli, stems included, roughly chopped
- 2 cups chicken broth
- 1 cup water
- 1 Tbsp dried mint
- 1 Tbsp lemon juice
- 1 tsp garlic salt
- pepper to taste
- cream or half and half (optional)
Steps:
- In a large pot, add oil, onion and celery. Sauté for 10 minutes, until soft and starting to brown.
- Add broccoli, chicken stock and water.
- Bring to a boil, reduce to simmer, cover, and cook for 10 to 15 minutes until broccoli is very soft.
- Stir in mint, lemon juice, garlic powder and pepper.
- Transfer soup to a blender and puree until smooth, a couple minutes.
- Serve as is or drizzle with cream or half and half. Sprinkle with mint.
