Broiled Haddock over Broccoli Alfredo FettuccineIf you are looking for something different to do with fish, you will love this. This dish goes a long way, because you don't need large pieces of fish because you are serving it with pasta. This recipe will feed 4 people, and is a very frugal.

Ingredients:

  • 1 lb haddock or cod, ask for two pieces of the thick ends of fish and cut each piece in two
  • 1/4 cup Italian flavored bread crumbs
  • 1/2 tsp garlic powder
  • 2 garlic cloves, crushed
  • 1/2 tsp basil, fresh chopped or dried
  • 1/2 tsp dried chives
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp black pepper
  • spray butter
  • 1/2 stick of butter, melted
  • 1 fresh lemon, sliced in quarters
  • 4 Tbsp fresh butter
  • 1 pkg (8oz) shredded fresh Parmesan cheese
  • 1 carton (16oz) half n' half/light cream
  • sprinkle of black pepper, sprinkle of salt, 1/2 tsp. crushed garlic, 1/2 tsp. basil & parsley
  • 1 small bunch fresh broccoli, cut off the flowerettes
  • 1 pkg fresh Fettuccine (Buttonni)
  • salt & olive oil in the water, 2-3 tbls of butter after it's cooked and drained

Steps:

  1. Start by putting a pot of boiling water on for the pasta with salt and olive oil in it. When it comes to a boil, I break the fresh pasta in small pieces before it is cooked. Cook according to directions on the package.

  3. Now, prepare your fish. Make sure your fish is cut into 4 serving pieces. Using a glass casserole dish, spray butter the dish well. Put the fillets into the dish. Sprinkle with all the seasonings and the crushed garlic. Add the bread crumbs and add the melted butter over the top of each piece, then squeeze two quarters of lemon over each piece.
  4. Put into a preheated oven, 375 F for 20 minutes. Then put under the broiler for 2-3 minutes.
  5. While this is cooking, make your Alfredo sauce. Using a saucepan, melt butter, add a splash of cream, heat then add a handful of Parmesan, heat, then cream, heat, then Parmesan. Keep repeating and whisking continuously without stopping until you use all the cream and Parmesan. At the end, add your spices, whisking and turn the heat on low.

  7. Add the broccoli pieces to the sauce and let simmer until tender. Stirring well.

  9. When the fish is cooked, take it out. Strain the fettuccine.

  11. Using tongs, place a good amount of fettuccine in the middle of the plate. (Then place a fillet of fish in the middle. Using a large spoon, spoon broccoli and Alfredo sauce over the broiled fish and pasta.
