I found the idea of buffalo chicken style pizza at Allrecipes and, as usual, just couldn't resist tweaking to create my own version. My biggest "must do" is to use Marie's Chunky Blue Cheese Salad Dressing or a comparable quality (preferably chunky) blue cheese dressing available in the produce section of your market. I pre-poached the chicken, which only took fifteen minutes, but you can also use your market's deli roasted chicken.
Anyone who knows me knows I love buffalo chicken flavored anything from meatballs and burgers to fries, wraps, and even wontons! And then of course there's my early in life love Buffalo (named Springfield) - LOL!
Preheat oven according to pizza crust package or recipe instructions.
Heat the hot sauce and butter together in a small saucepan until blended and then mix the chicken and hot sauce mixture together in a medium bowl.
Lightly brush the crust with the olive oil and prebake for 6 or 7 minutes.
Spread blue cheese dressing over the crust, top with chicken mixture, sprinkle with shredded cheese and bake until crust is golden brown and mozzarella is bubbly, using package or recipe directions minus pre-baking time as a timing guide.
