Description
I was craving butterscotch pudding, but hadn't realized how easy it was to make. You can eat this at any temperature, but since we live in a hot climate we chose to wait until it was chilled.
Ingredients:
- 1 1/2 cup packed brown sugar
- 1/4 cup cornstarch
- 1/2 tsp salt
- 3 cups whole milk
- 4 egg yolks
- 2 Tbsp butter
Steps:
- In a heavy bottomed pan whisk together the dark brown sugar, cornstarch and salt.
- In another bowl stir together the egg yolks and milk.
- Then pour the milk and egg mixture into the pan.
- Heat on medium heat, stirring constantly for about 10 minutes until the mixture starts to bubble and reaches pudding thickness.
- Let it bubble for about 30 seconds, add the butter and remove it from the heat. Keep stirring until the butter is well incorporated.
- Pour the pudding through a fine sieve to remove any lumps. Don't forget to lick the spoon ;)
- Lay parchment paper on top of the pudding and let cool.
- Once cooled to room temp, put it in the fridge.
- You can eat this at any temperature but since we live in a hot climate we chose to wait until it was chilled.

In the end we decided we liked this best frozen, otherwise it was a bit too sweet for us.
