Whenever you see overripe bananas in a store, buy as many as you can. Have your friends save them if they don't use them. Peel them and freeze until you have enough to make a HUGE batch of banana bread.
When you make the batter, instead of pouring it into loaves, pour it into lined cupcake pans. Freeze the banana cupcakes in large zip lock bags. The kids can grab a frozen banana bread cupcake and throw it in their lunch. By noon or snack time, it is ready to eat. Your kids are eating a much healthier option than cookies and Twinkies.
