I love quick recipes! These have only 4 ingredients (one of which is water) and are super fluffy. They are also lower in fat than most cookies, as there is only 4 tablespoons of shortening in the entire batch. I made mine with devil's food cake mix, but will soon be trying angel food among others.

I've been making cake-mix cookies for years - usually when our local humane society is having a bake sale. I can make many varieties quickly. I tend to call 'em "1-2-3 cookies" because I use one box of cake mix, two eggs, and 1/3 cup of oil. 10 minutes (+-) at 350 (depends on your area and your oven, of course). Any variety of cake mix, and add any other goodies you can think of...
I like the recipe for quick cookies but I would use butter instead of shortening. Butter is a natural and better for you shortening where shortening is a chemical

These would be good with chocolate chips in them, except I guess they wouldn't be lowfat anymore.
I frequently use a cake mix cookie recipe from all recipes.com that calls for vegetable oil though I recently tried one that used real butter & it was delicious! Cake mix cookies are a great alternative for when you don't have ingredients for a homemade batch and crave something other than your typical chocolate chip or sugar cookies.

Try this with the angel food mix; they're scrumptious!
1 angel food cake mix
1/2 c water
14 oz flaked coconut
1 t almond extract
1/2 c slivered almonds
Mix and scoop into 2T cookies. Bake @ 350 until golden.

I've been making cakemix cookies for years for our church bazaar where I have to make a whole lot of them. I just use one egg and one stick of softened butter. Whenever butter is on sale for under $3 I always buy the limit. It never seems to go bad.
