Here is an example, do plan to serve more depending if there are more adults and of course can't go wrong with leftovers!
I always make sure there is at least 4 ounces per person when there are sides available.
There are several factors that could influence how much you meat you may need for your party.
1. This sounds like a buffet - serve yourself - which is difficult to calculate especially considering the other items you are serving. Most people tend to add several slices and may not add any other condiment other than cheese?
2. Since fried chicken is always a favorite sandwiches may not be as popular.
3. Beef brisket/burnt ends may be the highlight of the day and lunch meat sandwiches may pale in comparison.
4. If you have plenty of chicken and beef brisket/burnt ends then I would say 2 ounces per person (5 pounds) may be sufficient (maybe 6 pounds just to be safe).
But if there is a possibility that more than 40 people will show up (or there are teenagers in the crowd) I would definitely go to 4 ounces each (10 pounds).
Lunch meat can be salvaged as left overs easier than any of your other food.
Hope this is a very casual party as you have several foods that tend to be messy when served and sauce stains anything!
I would also suggest having several boxes of large napkins available (they even have what is called 'BBQ napkins' that are extra large and moist).
