We are updating our ceiling by drywalling over a wood beam. How much can we shorten the beam that is at the peak of our vaulted ceiling? We want to drywall over it and make it as unobvious as possible.

What do you mean by "shorten"? This is probably a structural beam, so don't cut it! Paint it the same colour as the drywall and it will blend right in.
