I keep my loaf of bread in an air tight plastic bag, as well a my fruit in a bowl, on my kitchen counter. I think that the kitchen cabinet lightening, which is under all of my cabinets, causes these foods to go bad because of the light and the heat. My husband says I'm crazy.

It can make food go bad faster if the bulb is radiating warmth.
We never had under counter lighting before 3 years ago, and I agree, when I first kept food under them, it did go bad faster. We moved everything to cool, dark places in the counter or to the refrigerator and it keeps longer.

I have under counter lighting and have never experienced my food going bad, but I also dont keep it directly under the light at all times. Some lights to let off a good bit of heat, so I could see it going bad sooner, but it shouldnt be going bad quickly. Keeping your bread in the fridge makes it last longer in general, so I would try that. Fruit in the fridge is also an option. Cut fruit can be put in a bowl of water in the fridge and will keep it fresh longer.

Heat and light can cause food to spoil faster. This is normal and you might want to consider moving them to a cooler place that does not have so much light.
Many people who grow plants indoors use lighting to help the plants grow faster. Light can also help your food spoil quicker and it is not a good idea to store food under lamps or any other type of lights.
If you have incandescent lighting it gives off heat and can spoilage. Why dont you freeze your bread and just take out what you need?
This causes more heat and cuts your shelf life to minimal time,before it's use! Also be careful with spices! even through you cannot see the difference, spices do not carry the full flavor or strength to the end of the date if constantly being heated!
