Ingredients:
- 2 cans (15 oz) cannellini beans, rinsed and drained
- 3 Tbsp extra virgin olive oil
- 1/4 cup yellow onion, minced
- 1 1/2 tsp garlic, minced
- 4 tsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp Italian seasoning
- Dry white wine (I used chicken broth)
- Parmesan cheese
Steps:
- Heat the oil in a skillet.
- Add the onion and garlic and cook until soft and fragrant, around 2 minutes.
- Add the rest of the ingredients except the Parmesan cheese. Cook until softened and heated through, and until the liquid is reduced, about 3 minutes.
- Serve warm with some Parmesan cheese on top.
