Your recipe for canning Harvard beets has cornstarch in it. All the other recipes for canning Harvard beets says not to can with cornstarch, but to add it at time of serving. I'd like to know it the beets turn out alright with the cornstarch added in the canning?

I realize this is an older post, but thought I would add some insight about canning with corn starch. All of my research indicates this is a big fat no-no for safety reasons. However, a product called Clear Jel is the recommended thickener for canning. It is measured equal to corn starch, but is safe for canning. DO NOT use the Instant version. It is difficult to find it locally, but you can order it online directly from Hoosier Hill Farms, Walmart or Amazon.
I use this for all my pie filling recipes as well as Harvard beets.
