You can. I find the texture when canned to be mushy. To me, they do much better being frozen. I guess it depends on what you want to use them for when you are done. Frozen ones are great in smoothies, or they make great "betties" or "crumbles" or "tart".

Be sure to follow canning guidelines very carefully. If you are in the US, ask your home extension office for guidance or the Kerr website has good info:

I love dark plumbs but never tried canning as I usually just freeze whatever Is 'left over' to use within a few days.
If the canning process is new to you, I would suggest doing some research and determine what method would be best for you or maybe 'easier' is a better word.

Safety is always the first word in any canning process so always try to follow directions exactly.

Here are a couple of very good links that will help get you started and if you can follow visual sites better, then YouTube is the place to check.

My parents had a black plum tree in their backyard for years. Each year my mom would make plum jam and keep it for winter. She would not normally can whole or half plums, but instead, she would just freeze them so that she had enough to make another batch of jam instead.

Now on the other hand my son-in-law loved to can the plums and he made deliciously spiced plums that were fantastic and so good. I think if you want to can your plums that they do need some sort of seasonings in the canning process to make them taste better.

Yes, first you have to decide if you want the whole or halves, also if you want preserves. Here is a recipe for whole/halves- www.motherearthnews.com/.../canning-plums-ze0z1305zbla - also if you want to do preserves - www.instructables.com/.../
