You can. I find the texture when canned to be mushy. To me, they do much better being frozen. I guess it depends on what you want to use them for when you are done. Frozen ones are great in smoothies, or they make great "betties" or "crumbles" or "tart".

I love dark plumbs but never tried canning as I usually just freeze whatever Is 'left over' to use within a few days.
If the canning process is new to you, I would suggest doing some research and determine what method would be best for you or maybe 'easier' is a better word.
