Because of this, everyday, we discover things we weren't able to do or eat before since we now have more time and boredom has made us go beyond what is seen inside the four corners of our homes.

Because of this, everyday, we discover things we weren't able to do or eat before since we now have more time and boredom has made us go beyond what is seen inside the four corners of our homes.

Today I'm going to innovate one of the most common relief goods distributed to us. I call it "Carbonara Ala Pobre". I don't know what it means in the other language but in my dialect "Pobre" means poor. It is a low budget recipe using only canned goods and instant noodles.

Ingredients:

  • instant noodles (chicken, beef or pork flavors)
  • 1 cup milk
  • 2 Tbsp sliced mushrooms (optional)
  • tuna flakes in oil (you can use ham, bacon or any canned meat whichever is available)
  • 1 Tbsp cornstarch dissolved in 1/3 cup hot water
  • cheese (diced or grated)
  • 1/2 bouillon cube (if not using the noodle seasonings)
  • ground pepper
Ingredients for carbonara ala pobre.
 

Steps:

  1. Cook noodles according to package direction. Do not include the seasonings. Drain excess water.
  2. A plate of cooked noodles.
     
  3. Pour tuna including the oil, then add mushrooms and bouillon. If instant noodle flavor is classic or chicken, pork or beef, there's no need to use bouillon cube. Just use its seasoning mixes but only half of it.
  4. Adding tuna and mushrooms to a frying pan.

  5. Pour milk and simmer for another minute. Sprinkle with pepper.
  6. Adding a can of coconut milk to the pan.
     
  7. Add the diluted constarch. Adjust heat to low.
  8. Adding a cornstarch slurry to the pan.
     
  9. Sprinkle half of grated or diced cheese.
  10. Thickening the mixture in a frying pan.
     
  11. Stir constantly until cheese melts and sauce thickens.
  12. Pour sauce over cooked instant noodles..
  13. The carbonara mixture served over noodles.

  14. Top with cheese, then serve!
