A filling and delicious way of eating tacos with catfish. You can use tilapia if you would like too!
Prep Time: 20 minutes
Cook Time: 5-6 minutes
Total Time: 25 minutes
Yield: 10 tacos
Ingredients:
- 10 catfish fillet
- 1 lb sugar plum tomatoes
- 2 avocados
- 1 lime
- 3/4 white onion
- 2 Tbsp chopped cilantro
- Dash of black pepper
- 10 yellow corn taco shell
- Dash of garlic powder

Steps:
- Line baking pan with parchment paper. Marinate catfish with dash of black pepper, garlic powder and squeeze some lime juice on the fish. Allow to marinate for 15-20 minutes.

- Meaning prep filling for the tacos. Chop tomatoes, onions, cilantro, and scoop out avocado into a bowl.

- Add some lime juice and using your spoon, smash avocado into guacamole consistency.

- Preheat oven to 350 degrees F and bake fish for about 5-6 minutes or until ready.
- Toast taco shells. You are ready to assemble fish and guacamole. Optional: can be eaten with salsa, hot sauce, lettuce, cheese, etc.
