Bronze Post Medal for All Time! 107 Posts This is a low carb alternative to potato salad. It's a great dish to prepare for a potluck, a picnic or to serve your family.

Yield: approximately 6 servings
Ingredients:
- 2/3 cup mayonnaise
- 2 tsp mustard
- 2 tsp white vinegar
- 1/4 cup pickle relish
- 1/8 - 1/4 tsp. ground Cayenne pepper
- 3 boiled eggs, peeled and chopped
- 1/4 cup finely chopped onion
- 5 strips of bacon, cooked to crispy stage and chopped
- 1 lb bag frozen cauliflower*, thawed and cut into bite-size pieces
- salt to taste
*You can steam the cauliflower in the microwave for 2 to 3 minutes if you want a soft-textured salad.
Steps:
- In a large bowl, combine first 5 ingredients. Mix well.
- Gently stir in chopped boiled eggs, onion, bacon and cauliflower pieces.
- Stir until everything is well-coated.
- Refrigerate overnight. Serve cold.
